Winemaker Notes
Upon receipt grapes were gently destemmed into ¼ ton fermentation bins. Temperature was kept below 50 degrees for a 3-5 day cold soak after allowed to come to temperate slowly as fermentation occurred naturally not allowing to go above 85 degrees fermentation extended for 6 days. Minimal post fermentation maceration of 3 days for a total of 20 days on the skins. Free run juice went directly into barrel while skins were slowly pressed retaining the remaining juice. Combination of new and neutral French oak barrels were used and the wine had an 18-month elevage. The Wilkens Pinot noir will always be the best barrels of the vintage and only produce in the best years. 46 cases were produced.
