After an early morning hand harvesting as two separate lots, the Chardonnay grapes went straight into a long, hard pressing. The juice settled overnight and was then racked into neutral French oak barrels. The Chardonnay naturally fermented through primary and Malo, and then aged on its fermentation lees for 15 months prior to bottling.
